Braised red cabbage is the classic side for venison, pheasant and the Christmas roast. Apple, red wine vinegar and warm spices balance sweet and sour, and it improves when made a day ahead. Serves six.
Ingredients
- 1 small red cabbage (about 750g), finely shredded, core removed
- 2 tbsp olive oil or butter
- 1 large onion, thinly sliced
- 2 Bramley or eating apples, peeled and grated
- 3 tbsp red wine vinegar
- 3 tbsp soft brown sugar
- 150ml red wine or apple juice
- 1 cinnamon stick
- 3 cloves
- Pinch of ground nutmeg
- Salt and black pepper
- 2 tbsp redcurrant jelly (optional)
Method
- Heat the oil in a large heavy casserole and soften the onion for 5 minutes.
- Add the cabbage, apples, vinegar, sugar, wine, cinnamon, cloves and nutmeg. Season well and stir.
- Cover with a tight lid and cook over a low heat for 1 hour 15 minutes, stirring every 20 minutes, adding a splash of water if it looks dry.
- Uncover for the last 10 minutes so any excess liquid reduces to a glossy glaze.
- Remove the cinnamon and cloves, stir in the redcurrant jelly if using, and adjust the seasoning, adding a little more vinegar or sugar to balance.

What to serve with braised red cabbage
Roast venison, roast pheasant, duck, pork, sausages or the Christmas turkey. It is also good cold with cheese.
Tips
- Always add the vinegar early; it keeps the cabbage a bright ruby colour.
- Slice the cabbage as finely as you can for a silky texture.
- It reheats well and keeps for four days in the fridge.
